Mesa del Sol Announces Rose’s Table Café at Aperture Center

Albuquerque, NM – Mesa del Sol today announced the opening of the newest business at Aperture Center. Rose’s Table Café, “Una Mordita de Yucatan” (a little bite of Yucatan), is the most recent company to open its doors in this planned mixed use development. Offering New Mexico favorites, American classics and some exotic samplings from the Yucatan, Rose’s menu is eclectic, simple and has something for everyone.

Owner Rosemary Ceballos-Hirning is a South American native who has numerous years of restaurant experience. She operated a café at the New Mexico Design Center in Albuquerque for several years before making the decision to relocate to Mesa del Sol. Her menu reflects her South American roots and her love of New Mexican cuisine.

“I love what the development team is doing to make Mesa del Sol sustainable, adaptable and friendly,” said Rosemary Ceballos-Hirnin. “Eating is a community activity and Rose’s Table Café will be a great gathering place for residents.”

Currently Rose’s will operate from 7 a.m. to 2 p.m. Monday through Friday and serve breakfast all day. According to Chris Anderson, VP of Development for Mesa del Sol, “The addition of Rose's Table Café is another important layer being added to the mixed use promise. Our vision is to create a sustainable community where a family can walk to school, work, businesses and restaurants.” In keeping with this vision, Mesa del Sol also welcomed back students to the International School in August, now in its fourth year.

Construction on homes in Mesa del Sol is anticipated to begin in late 2011 with homes available for purchase in Spring 2012. In the meantime, everyone is invited to come out to Mesa del Sol to check out the latest progress and to enjoy a delicious breakfast or lunch at Rose’s.
